I cook scallops quite frequently but it was not until last night that something clicked in my head and I was finally able to cook them just as I had hoped to. It’s simple. Do not touch them. Let them cook.
I know that sounds obvious but most people, including myself, will constantly touch our food while it’s cooking because the last thing in the world we want to do is dry it out. However, while doing that we often compromise the desired texture of our food.
When it comes to scallops, you want each side to have a nice crisp layer, while still being moist in the middle. To achieve this all you have to do it is pat them dry with a paper towel, season them however you desire and cook them on a well heated saute pan for about 3-5 minutes per side. If you have the same problem I have, not being able to leave them alone while cooking, I would suggest trying to over cook them. There is really no logic behind that except for that fact it worked for me.
